VEGAN SHRIMP

—“Gentle Shrimp from the Earth”—


was born in Motosu City, Gifu Prefecture, a region surrounded by majestic mountains and the Neogawa River, far from the ocean. Despite being landlocked with no access to the sea, this unique plant-based shrimp was created using ingredients from local farms.
 

For over 60 years, Ibiden Bussan has utilized advanced drying technologies to develop a variety of ingredients for dried vegetables and instant foods. These techniques not only reduce food waste but also offer opportunities for upcycling local agricultural products.

What began as a project "for one person" has now expanded to become "for everyone" with the VEGAN SHRIMP—Gentle Shrimp from the Earth initiative. Fueled by the passion of young developers, this project marks the first small step towards sharing this innovative product with the world, not just in Japan.
